Chorizo Pasta Salad
This is another family favourite – a combo of leafy spinach, pasta and chorizo. Honestly play around to make it your own, it will become your go to salad as well!
Ingredients
- 3 chorizo sausages
- 500 grams large spiral pasta 1 package
- 1 package baby spinach
- 1 package cherry tomatoes
- ¾ cup basil leaves
- 125 grams parmesan cheese grated
To make dressing
- ½ cup olive oil extra light
- 1-2 Tbsp Italian white wine vinegar
- 2 cloves garlic crushed
- 1 tsp oregano
- salt and pepper to taste
Instructions
To assemble
- Cook the chorizo sausage in a frying pan until the cut sausage is hot to the touch. Set aside to cool slightly , then slice chorizo in small pieces.
- Cook the pasta in hot boiling water until al dente, just cooked. Drain the pasta and place in a large serving bowl.
- Add the sliced chorizo, spinach, basil leaves, grated parmesan cheese and dressing. Toss to combine and serve with extra parmesan cheese grated on top.
To make dressing
- Place olive oil in cup and add vinegar. Whisk to combine and taste. Adjust amounts to get the taste you like.
- Crush garlic into cup then add oregano and whisk to combine. Season with salt and pepper
