			Minestrone Soup
My version of the classic minestrone soup, full of chick peas, bok choy and homemade chicken soup.

Minestrone Soup
My version of the classic favourite Minestrone Soup- lots of chickpeas, bok choy and homemade chicken stock
Ingredients
- 1-2 Tbsp olive oil
- 1 onion, finely chopped
- 2 bok choy, finely sliced
- 2 carrots
- 2 garlic cloves,crushed
- 1 tsp rosemary
- 2 cans crushed and sieved tomatoes
- 5-6 cups chicken stock
- 1 can chickpeas
- ½ cup macroni or other pasta
- salt and pepper to taste
- 1 handful chopped Italian parsley
Instructions
- In a large pot, saute onion, carrots, stems of bok choy and garlic in 1-2 Tbsp of olive oil. Add rosemary ,salt and pepper. Cook for 2-3 minutes
- Add canned tomato then chicken stock, give a stir and bring to a boil to cook veggies then reduce to a shimmer. Add chick peas and pasta and cover to shimmer for 3-5 mins.
- Add leafy section of bok choy and handful of parsley. Cook for 1-2 minutes. Then serve with crusty bread or parmesan crisps.
