
Brownie- Gluten Free
Who knew getting your daily portion of veggies could be so tasty!

Healthy Brownie
This brownie has a rich moist texture which would make a great base brownie to add your flavours. Next time I will substitute white chocolate for chopped roast almonds.
Ingredients
- 3 cups cooked orange kumara
- 1 cup almond butter
- 1½ cup maple syrup
- ½ cup almond meal
- ¾ cup cocoa
- 2 Tbsp coconut oil
- 2 tsp vanilla paste
- ½ tsp baking soda
- ½ tsp baking powder
- pinch of salt
- 1 packet sugarfree choc chip cookies
- 1 packet sugarfree white choc chips
Instructions
- Peel and chop orange kumara then put in pot with enough water to cover kumara. Then boil for 10 minutes or until soft. Drain and mash kumara- let cool for 10-15 minutes
- Preheat oven to 180 C and line 9 x 9 baking pan with baking paper.
- Mix together slightly cooled kumara, almond butter, coconut oil and maple syrup. Add cocoa and vanilla, mix well.
- Add almond meal , baking soda , baking powder and pinch of salt.
- Stir in dark chocolate chips and half white chocolate chips.
- Place in pan and sprinkle remaining white chocolate chips.
- Cook in oven for 25- 30 minutes
