Healthy Brownie

This brownie has a rich moist texture which would make a great base brownie to add your flavours. Next time I will substitute white chocolate for chopped roast almonds.

Ingredients
  

  • 3 cups cooked orange kumara
  • 1 cup almond butter
  • cup maple syrup
  • ½ cup almond meal
  • ¾ cup cocoa
  • 2 Tbsp coconut oil
  • 2 tsp vanilla paste
  • ½ tsp baking soda
  • ½ tsp baking powder
  • pinch of salt
  • 1 packet sugarfree choc chip cookies
  • 1 packet sugarfree white choc chips

Instructions
 

  • Peel and chop orange kumara then put in pot with enough water to cover kumara. Then boil for 10 minutes or until soft. Drain and mash kumara- let cool for 10-15 minutes
  • Preheat oven to 180 C and line 9 x 9 baking pan with baking paper.
  • Mix together slightly cooled kumara, almond butter, coconut oil and maple syrup. Add cocoa and vanilla, mix well.
  • Add almond meal , baking soda , baking powder and pinch of salt.
  • Stir in dark chocolate chips and half white chocolate chips.
  • Place in pan and sprinkle remaining white chocolate chips.
  • Cook in oven for 25- 30 minutes
