Minestrone Soup

My version of the classic favourite Minestrone Soup- lots of chickpeas, bok choy and homemade chicken stock
Course Soup

Ingredients
  

  • 1-2 Tbsp olive oil
  • 1 onion, finely chopped
  • 2 bok choy, finely sliced
  • 2 carrots
  • 2 garlic cloves,crushed
  • 1 tsp rosemary
  • 2 cans crushed and sieved tomatoes
  • 5-6 cups chicken stock
  • 1 can chickpeas
  • ½ cup macroni or other pasta
  • salt and pepper to taste
  • 1 handful chopped Italian parsley

Instructions
 

  • In a large pot, saute onion, carrots, stems of bok choy and garlic in 1-2 Tbsp of olive oil. Add rosemary ,salt and pepper. Cook for 2-3 minutes
  • Add canned tomato then chicken stock, give a stir and bring to a boil to cook veggies then reduce to a shimmer. Add chick peas and pasta and cover to shimmer for 3-5 mins.
  • Add leafy section of bok choy and handful of parsley. Cook for 1-2 minutes. Then serve with crusty bread or parmesan crisps.
