Chorizo Pasta Salad

This is another family favourite - a combo of leafy spinach, pasta and chorizo. Honestly play around to make it your own, it will become your go to salad as well!

Ingredients
  

  • 3 chorizo sausages
  • 500 grams large spiral pasta 1 package
  • 1 package baby spinach
  • 1 package cherry tomatoes
  • ¾ cup basil leaves
  • 125 grams parmesan cheese grated

To make dressing

  • ½ cup olive oil extra light
  • 1-2 Tbsp Italian white wine vinegar
  • 2 cloves garlic crushed
  • 1 tsp oregano
  • salt and pepper to taste

Instructions
 

To assemble

  • Cook the chorizo sausage in a frying pan until the cut sausage is hot to the touch. Set aside to cool slightly , then slice chorizo in small pieces.
  • Cook the pasta in hot boiling water until al dente, just cooked. Drain the pasta and place in a large serving bowl.
  • Add the sliced chorizo, spinach, basil leaves, grated parmesan cheese and dressing. Toss to combine and serve with extra parmesan cheese grated on top.

To make dressing

  • Place olive oil in cup and add vinegar. Whisk to combine and taste. Adjust amounts to get the taste you like.
  • Crush garlic into cup then add oregano and whisk to combine. Season with salt and pepper
