Megan's Chocolate Cake

A great no fail cake

Ingredients
  

  • 2 cups flour
  • 2 cups sugar
  • ¾ cup unsweetened cocoa
  • 2 tsp baking powder
  • tsp baking soda
  • 1 tsp salt
  • 1 tsp espresso powder
  • 1 cup buttermilk almond or coconut milk
  • ½ cup veggie oil ,canola or melted coconut oil
  • 2 large eggs
  • 2 tsp vanilla
  • 1 cup boiling water

Instructions
 

  • Preheat oven to 350 C. Prepare two 9 inch cake pans , make sure lined with baking paper
  • Add flour, sugar, cocoa ,baking powder, baking soda, salt and espresso powder to a large bowl. Whisk together then add liquids. milk , eggs and mix well.
  • Add hot water to cake batter until well combined.
  • Distribute cake batter evenly between the 2 prepared cake pans. bake for 30 -35 mins or until a toothpick comes out clean.

Notes

Can be frozen once cooled for up to 2 months
