Bean Feta Salad Recipe

A tasty salad that has a mix of beans, feta and basil is a family favourite which comes out every summer bbq.
Course Salad

Ingredients
  

  • 250 grams beans
  • 200 grams feta
  • ½ cup basil leaves
  • 1 punnet cherry tomatoes

Dressing

  • 3 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 2 spring onion finely chopped
  • 2-3 cloves crushed garlic
  • salt and pepper to taste

Instructions
 

  • Trim the ends of the beans and blanch in boiling water for 3 mins them plunge in cold water to stop cooking. Drain the beans
  • Toss the beans , whole cherry tomatoes, feta and basil in a serving bowl
  • Make dressing by combining vinegar, oil , spring onions , garlic and salt/pepper to taste. Shake well then pour over salad just before serving
