Prepare cupcake tray with cupcake liners.
In a microwave proof bowl, break chocolate up into chunks and add coconut oil. Microwave for 45 - 60 secs. Remove and stir until smooth and glossy. If not quite melted, microwave another 15 secs.
Once the chocolate is the right consistency, pour a small amount into the lined cupcake tray -one at a time and swirl to coat the sides of the liner a little. Continue till all bottoms are done.
Place tablespoon of peanut butter into the center of the cupcake liners.
Cover with remaining chocolate to hide the peanut butter. Cool then put in fridge to harden for a few hours.
Peel off cupcake liners and you have a homemade peanut butter cup.
