Prepare the enriched dough and let rise for 2 hours. Divide the risen dough in 2 equal portions. Each will make its own bread
Take 1 portion and roll out to square
Mix softened butter, cinnamon and sugar into a paste, then put the paste on half the bread dough. Fold the unpasted half back unto itself. Pinch to seal the edges then roll out to another square.
Place the apple mixture in the center of the square then prepare the sides of the dough by cutting diagonally and twist the dough and cross over the apple mixture until all covered.
Chill the prepared bread in the fridge for an hour or more then take it out and let it rise for another hour.
Preheat oven 180 C
Apply an eggwash to the top of the cinnamon braid . Cook for 25 min or until golden brown and cooked
